Smoked Aubergine Goulash

This plant based goulash is full of deep flavours, with tender aubergine, warming spices, and a rich tomato base. It is a great option when you want something hearty that still feels nourishing and balanced.

The combination of fibre rich vegetables and spices makes this a satisfying meal that supports digestion and steady energy.

Serves 4 - Prep 45 minutes

Ingredients

2 aubergines

1 onion, diced

2 garlic cloves, minced

1 red bell pepper, chopped

1 red chilli, finely chopped (optional)

1 tbsp. lemon juice

1 tsp. smoked paprika

1 tsp. sweet paprika

1 can chopped tomatoes

1 tbsp. tomato puree

2 tbsp. chopped parsley

Preparation

Wash and slice the aubergines into ¼-inch pieces. Salt both sides and let sit for 20-30 minutes to release water.

Heat 1 tbsp olive oil in a large pot over medium heat. Add diced onion, cook for 2 minutes, then add minced garlic and cook for another 1-2 minutes.

Add chopped red bell pepper and finely chopped chilli. Cook for 4 minutes, stirring constantly.

Dry aubergines slices with paper towels and cut into cubes. Add to the pot with another 1 tbsp olive oil. Cook for 10 minutes, stirring occasionally.

Add lemon juice, smoked paprika, sweet paprika, and black pepper.

Add chopped tomatoes and tomato puree. Stir and bring to a boil. Cover and cook for 15 minutes or until the aubergine is soft. Add water if the sauce is too thick.

Stir in chopped parsley and adjust salt if needed. Serve with rice or pasta.
