Overnight oats

Quick, easy, healthy and yummy… what’s not to love?

That’s one recipe to keep in mind for busy mornings. I love that it is very easy to tweak too: you can use different types of milk, top it with whatever is in your pantry - nuts, seeds, dried fruit.

I love berries on my oats, but I don’t buy them when they are not in season, so a great option for me is to use frozen fruit instead. Just put them in a container to thaw in the fridge overnight, and add them to your oats in the morning, with the rest of your toppings.

 

Overnight oats - top them with whatever you like!

 

Ingredients (4 servings)

2 cups rolled oats

2 cups milk (if using dairy-free, choose unsweetened)

1 cup yogurt (I have tried with both Greek and soy yoghurt, they both worked)

3 tablespoons sweetener of your choice (maple syrup and honey work well)

1/4 teaspoon cinnamon (optional, but I like that it helps with blood sugar levels)

Preparation

Mix everything in a bowl, stir until combined.

Divide into jars - or don’t, and serve directly from the bowl in the morning. This recipe is really flexible, take it, do it, tweak it, you can’t go wrong!

Store in the fridge overnight.

Note: if you are using frozen berries, don’t forget to put then in the fridge to thaw.

In the morning, add your toppings of choice: nuts, seeds, granola, fresh fruit, spices…
