This is one of those simple, flexible recipes that works with whatever is in your fridge. It is warm, comforting, and easy to adapt depending on the season or what needs using up.
It is also a great way to include a variety of vegetables in one meal, making it both practical and nourishing.
This is the kind of recipe I often recommend as a health coach, especially for busy weeks when you want something wholesome without overthinking it.
Vegetable crumble
A simple, nourishing comfort meal
Meals like this make healthy eating feel easy and realistic. You are combining fibre-rich vegetables with healthy fats and seeds, helping to support energy and keep you satisfied.
This is often the approach taken within nutrition coaching, where the focus is on simple, balanced meals that can be adapted to suit your lifestyle.
Ingredients
Vegetables – use whichever you have, I used 1 courgette, 1 leek, 1 red pepper, 1 onion and 2 garlic cloves
130g flour (mix plain and wholemeal if you wish)
30g pumpkin seeds
30g sunflower seeds
80g butter, cut into cubes (or vegan butter – I used Flora unsalted block)
Preparation
Preheat oven at 180°C.
Heat 1tbsp olive oil in a large frying pan. Cook your vegetables for 10-15 minutes, or until tender.
Meanwhile, prepare the crumble dough: mix the flour and the seeds. Add some seasoning to taste. Add the butter, use a fork or your hands to incorporate the butter and make a crumbly dough.
Put the vegetables in an oven-proof dish, crumble the dough on top. Cook for 30 minutes. Enjoy!
