Red pepper and sweet potato soup

A tasty soup packed with wholesome ingredients
Serves 2-4
Ingredients
1 red onion, chopped
2 cloves of garlic, chopped
2 red peppers, chopped
2 carrots, chopped
1 sweet potato
1L (4 cups) vegetable stock
1 tbsp olive oil
salt and pepper, to taste
Preparation
In a large saucepan, sauté the onion and garlic in 1 tbsp olive oil for 5-10 minutes, or until the onion has softened.
Add the peppers, carrots and sweet potato. Cook for 5 minutes on medium heat, then add vegetable stock.
Simmer for 20-25 minutes, until the vegetables are cooked through.
Use a hand blender and blend into a smooth soup.

When buying peppers, choose the ones with the deepest colour you can find. The darker they are, the higher the concentration of antioxidant flavonoids, which support cellular health and help reduce inflammation.
